  • 1 head of cauliflower, cut into florets
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of smoked paprika
  • 1/4 teaspoon of sea salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of hummus
  • 1/4 cup of crunchy nuts of your choice (such as almonds, walnuts, or pecans)
  • 1/4 cup of fresh parsley, chopped
  • 1 tablespoon of lemon juice


Preheat the oven to 400 degrees Fahrenheit. Place the cauliflower florets on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, sea salt, and black pepper. Toss to coat. Roast for 20-25 minutes, flipping the florets halfway through, until they are golden brown and tender.

While the cauliflower is roasting, prepare the other ingredients. In a small bowl, mix together the hummus, crunchy nuts, and fresh parsley. Add the lemon juice and mix. Set aside.

Once the cauliflower is done roasting, let it cool for a few minutes. Then, transfer the roasted cauliflower to a bowl. Top with the hummus mixture and toss to combine. Serve immediately and enjoy!
