Vegetarian Spinach and Mushroom Quiche

Ingredients
- 1 9-inch unbaked pie crust
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups fresh spinach, chopped
- 4 eggs
- 1/2 cup shredded cheese
- 1/2 cup milk
Preparation
Preheat your oven to 375 degrees F (190 degrees C). Place a 9-inch unbaked pie crust in a 9-inch pie plate.
In a large skillet, heat the olive oil over medium heat. Add the onion and mushrooms and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the garlic, oregano, salt, and pepper and cook for 1 minute, stirring constantly. Add the spinach and cook until wilted, about 3 minutes. Remove from the heat and let cool slightly.
In a medium bowl, whisk together the eggs, cheese, and milk. Add the cooled vegetable mixture and stir to combine. Pour the mixture into the prepared pie crust.
Bake for 30-35 minutes, or until the center of the quiche is set. Let cool on a wire rack for 10 minutes before serving.
