A Delicious Vegetarian Recipe

Veggie Quesadillas or Soft Tacos are a delicious and versatile meal that can be enjoyed any time of the day. They’re packed with flavor, nutrition, and are incredibly easy to make. Plus, they’re perfect for vegetarians and vegans alike. The best part? You can customize them to your liking by adding your favorite vegetables, sauces, and spices.


  • 4-6 small flour or corn tortillas
  • 1 cup of your favorite grated cheese (for vegan versions, use vegan cheese)
  • 1 cup of cooked black beans
  • 1 cup of cooked white or brown rice
  • 1 cup of cooked or canned corn
  • 1/2 cup of finely chopped bell pepper
  • 1/4 cup of chopped onions
  • 1/4 cup of finely chopped fresh cilantro
  • 1 tablespoon of olive oil
  • Salt and pepper to taste


Begin by heating a large skillet over medium-high heat. Add the olive oil and then add the bell peppers and onions. Cook until the vegetables are softened, about 5 minutes. Add the black beans, corn, and rice and continue to cook for an additional 5 minutes. Add the cilantro, salt, and pepper to taste. Reduce the heat to low and cook for an additional 5 minutes. Remove the skillet from the heat and set aside.

In a separate skillet, heat over medium-high heat. Place one of the tortillas in the skillet and sprinkle with cheese. Top with the cooked vegetables, then another layer of cheese. Place a second tortilla on top and press down. Cook for 3-4 minutes, or until the cheese is melted and the tortilla is golden brown. Flip the quesadilla and cook for an additional 3-4 minutes.

Repeat the process with the remaining tortillas and vegetables. Serve the quesadillas with your favorite salsa, guacamole, or sour cream. Enjoy!
