  • 1 teaspoon of smoked paprika

  • 1/4 teaspoon of black pepper
  • 1 can of black beans, drained and rinsed
  • 1 can of diced tomatoes
  • 1/2 cup of vegetable broth
  • 1/4 cup of chopped fresh cilantro
  • 1/2 cup of cooked quinoa
  • 1 avocado, diced
  • Juice of 1 lime

Preparation

In a large skillet, heat the coconut oil over medium-high heat. Add the onion, garlic, bell peppers, and mushrooms. Cook, stirring often, for about 5 minutes, or until the vegetables are softened. Add the smoked paprika, cumin, chili powder, salt, and black pepper. Cook, stirring often, for another 2 minutes.

Add the black beans, tomatoes, and vegetable broth. Bring to a simmer and cook for 5 minutes. Add the cilantro and quinoa and cook for another 2 minutes. Add the CBD oil and stir to combine.

To serve, divide the quinoa mixture among four bowls. Top with the diced avocado and a squeeze of lime juice. Enjoy!
