It is combined with peanut butter, honey, and maple syrup to create a delicious and healthy granola that is perfect for breakfast or as a snack. This vegan granola recipe is easy to make and can be stored for up to two weeks in an airtight container.

Ingredients

  • 2 cups puffed amaranth
  • 3/4 cup smooth peanut butter
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/4 cup vegan chocolate chips
  • 1/4 cup chopped peanuts
  • 1/4 cup pumpkin seeds
  • 1/4 cup dried cranberries
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt

Preparation

Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

In a large bowl, combine the puffed amaranth, peanut butter, honey, maple syrup, chocolate chips, peanuts, pumpkin seeds, dried cranberries, cinnamon, and salt. Stir until all of the ingredients are combined and a thick paste is created.

Spread the mixture out onto the prepared baking sheet and, using a spatula, spread it out so it is evenly distributed. Bake for 15-20 minutes, or until golden brown.

Remove from the oven and allow to cool completely before transferring to an airtight container. Store in the refrigerator for up to two weeks. Enjoy!
