This delicious pasta dish is a great option for vegetarian and vegan diets. The sauce is made with mushrooms and zucchini, giving it a light yet flavorful taste. Ingredients

  • 1 lb. of your favorite pasta
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 onion, diced
  • 1/2 pound mushrooms, sliced
  • 2 zucchinis, chopped
  • 1/2 cup vegetable broth
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Preparation

Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Once the pasta is cooked, drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the garlic and onion and cook for 2-3 minutes, stirring occasionally. Add the mushrooms and cook for an additional 3-4 minutes.

Add the zucchini to the skillet and cook for 1-2 minutes, stirring occasionally. Pour in the vegetable broth and bring to a simmer. Add the oregano, basil, red pepper flakes (if using), and salt and pepper. Simmer for 5-7 minutes, or until the vegetables are tender.

Add the cooked pasta to the skillet and toss to combine. Cook for 1-2 minutes, stirring occasionally. Taste and adjust seasonings if needed. Serve topped with fresh parsley (optional) and enjoy!
