Ingredients

  • 2 cups of orange juice
  • 1 ½ cups of mixed berries (such as blueberries, raspberries, blackberries, or strawberries)
  • 1-2 tablespoons of maple syrup (optional)
  • 2 tablespoons of cornstarch
  • 1 tablespoon of lemon juice
  • A pinch of sea salt

Preparation

Before you begin, prepare your ingredients by washing and cutting the berries into small pieces. Then, in a medium-sized saucepan, combine the orange juice, berries, and maple syrup (if using). Heat the mixture over medium heat, stirring occasionally, until it begins to boil. Once it has reached a boil, reduce the heat to low and simmer for 10 minutes.

In a small bowl, whisk together the cornstarch, lemon juice, and a pinch of salt until it forms a paste. Slowly add this mixture to the saucepan, stirring constantly. Continue to cook the mixture over low heat for another 10 minutes, or until it has thickened to your desired consistency. If you find that the mixture is too thick, you can add a little bit of orange juice to thin it out.

Once the Orange Juice Simmered Berries have finished cooking, remove them from the heat and let them cool. Serve the Orange Juice Simmered Berries either warm or cold, depending on your preference. Enjoy!
