Ingredients

  • 1 package of firm tofu, drained
  • 1 tablespoon of extra-virgin olive oil
  • 1 cup of sliced mushrooms
  • 1 bell pepper, diced
  • 1/4 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of smoked paprika
  • 1/4 teaspoon of turmeric
  • 1/4 teaspoon of ground black pepper
  • 1/4 cup of vegetable broth
  • 2 tablespoons of nutritional yeast
  • Salt to taste

Preparation

Begin by crumbling the tofu into a large bowl. Make sure to break it up as much as possible so that it resembles the texture of scrambled eggs.

Next, heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the mushrooms and bell peppers and cook until the vegetables are tender, about 5 minutes.

Add the garlic powder, onion powder, smoked paprika, turmeric, and black pepper to the skillet and stir to combine. Cook for another minute or so until the spices are fragrant.

Add the tofu to the skillet and stir to combine. Cook for a few minutes, stirring often, until the tofu is heated through. Add the broth and nutritional yeast to the skillet and season with salt to taste. Cook for another 5 minutes or so until the liquid has been absorbed.
