For the mango curry chickpeas, you will need the following ingredients:
- 2 tablespoons olive oil
- 1 onion, finely diced
- 3 cloves garlic, finely chopped
- 2 teaspoons fresh ginger, grated
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon chili powder (optional)
- 1 cup vegetable broth
- 1 can coconut milk
- 1 large mango, diced
- 2 cups cooked chickpeas
- Salt to taste
Preparation
Start by heating the olive oil in a large pot over medium-high heat. Once the oil is hot, add the onion and garlic and cook for about 3 minutes, stirring occasionally. Add the ginger, curry powder, cumin, coriander, turmeric, black pepper, and chili powder (if using), and stir. Cook for another minute.
Add the vegetable broth and coconut milk to the pot and bring to a boil. Reduce the heat to low and simmer for about 10 minutes. Add the diced mango and cooked chickpeas and simmer for another 10 minutes.
