- 1 package lemon jello
- 1 cup boiling water
- 1/2 cup fresh lemon juice
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped bell pepper
- 1/2 cup finely chopped carrots
- 1/4 cup vegan mayonnaise
- 1/4 cup vegan sour cream
- Salt and pepper to taste
Begin by adding the lemon jello to a medium-size bowl. Pour the boiling water over the jello and mix until all of the jello has dissolved. Then add the lemon juice, stirring until combined. Allow the mixture to cool for about 15 minutes.
While the jello is cooling, prepare the vegetables by finely chopping the celery, onion, bell pepper, and carrots. Add the vegetables to the jello mixture and stir until combined.
In a separate bowl, combine the vegan mayonnaise and vegan sour cream. Stir until completely combined, then add to the jello mixture. Mix until all of the ingredients are thoroughly combined.
Once the jello mixture is completely cooled, pour into a 9×13 inch pan. Cover with plastic wrap and chill in the refrigerator for at least 4 hours, or until the jello has set.
When the jello has set, remove from the refrigerator and cut into small squares. Serve chilled, with a sprinkle of salt and pepper on top. Enjoy!
