They’re packed with healthy ingredients such as oats, walnuts, dates, coconut, and lemon zest. These no-bake energy bites are easy to make and have the perfect balance of sweet and tart. Enjoy them as a snack or as a sweet treat at the end of a meal.
Ingredients
- 1 cup rolled oats
- ¼ cup raw walnuts
- ¼ cup unsweetened shredded coconut
- ¼ cup pitted dates
- Zest of 1 lemon
- 2 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
Preparation
Begin by adding the oats, walnuts, coconut, and dates to a food processor. Pulse the ingredients together for 10-15 seconds until a coarse meal forms.
Add the lemon zest, coconut oil, maple syrup, and vanilla extract to the food processor. Pulse the ingredients together until a sticky dough forms, about 30-45 seconds.
Line a baking sheet with parchment paper. Scoop the dough out of the food processor and roll it into 1-inch balls. Place the balls on the parchment-lined baking sheet. Place the baking sheet in the fridge for 30 minutes to allow the energy bites to set.
Once the energy bites have set, remove them from the fridge and enjoy. These energy bites will stay fresh for up to one week in the refrigerator.
