Ingredients

  • 1 package of your favorite vegan noodles
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons agave nectar
  • 1 tablespoon sesame oil
  • 1/4 cup vegetable broth
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes, optional
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped peanuts, optional
  • Salt and pepper to taste

Preparation

Begin by bringing a large pot of water to a boil. Once boiling, add the noodles and cook them according to the package instructions. When the noodles are done, drain them and set aside.

In a medium bowl, whisk together the peanut butter, soy sauce, agave nectar, sesame oil, vegetable broth, garlic, and red pepper flakes until well combined. Set aside.

Heat a large skillet over medium heat and add the carrots and bell peppers. Cook for 5 minutes, stirring occasionally, until the vegetables are tender. Add the cooked noodles to the skillet and pour the peanut butter mixture over top. Stir everything together until the noodles are evenly coated in the sauce. Cook for an additional 2 minutes, stirring frequently, until the sauce is hot and bubbly.

Season the noodles with salt and pepper to taste. Serve the noodles with chopped peanuts and extra vegetables, if desired. Enjoy!
