Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup cocoa powder
- 3/4 cup vegan butter, melted
- 1 cup vegan sugar
- 1/4 cup vegan sour cream
- 1/4 cup stout beer
- 1 teaspoon vanilla extract
- 1/4 cup vegan dark chocolate chips
Preparation
Preheat the oven to 350°F. Grease a 12-cup muffin tin with vegan butter or cooking spray.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, whisk together the cocoa powder, melted butter, and sugar until combined. Add the sour cream, stout beer, and vanilla extract and mix until combined. Slowly add the dry ingredients and mix until just combined. Fold in the dark chocolate chips.
Divide the batter evenly among the prepared muffin tin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
To make the frosting, beat together 1/2 cup vegan butter, 2 cups powdered sugar, 1/2 teaspoon vanilla extract, and 2 tablespoons of stout beer until light and fluffy. Spread the frosting on the cooled cakes and enjoy!
