Vegetarian Stuffed Bell Peppers
Vegetarian stuffed bell peppers are a delicious and healthy comfort food. They are full of flavor and a great way to get your daily dose of vegetables. The bell peppers are stuffed with a savory mixture of rice, lentils, vegetables, and spices, and then baked until tender. Ingredients
- 4 large bell peppers (any color)
- 1 cup cooked brown rice
- 1/2 cup cooked lentils
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 1/2 cup diced mushrooms
- 1/2 cup vegetable broth
- 2 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup shredded vegan cheese
Preparation
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds. Place the peppers in a baking dish and set aside.
In a large bowl, combine the cooked rice, lentils, onion, celery, carrots, mushrooms, vegetable broth, garlic, Italian seasoning, paprika, salt, and pepper. Mix until everything is well combined.
Stuff the bell peppers with the rice and vegetable mixture, making sure to fill each pepper to the top. Sprinkle the tops with the parsley and vegan cheese.
Bake the peppers in the preheated oven for 25 to 30 minutes, or until the peppers are tender and the cheese is melted and golden brown.
Serve the stuffed peppers hot, with your favorite sides. Enjoy!
