Herbed Fresh Pea Soup with Garlic Croutons

Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable stock
- 2 cups fresh or frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 2 tablespoons vegan butter
- 1/2 cup vegan bread crumbs
- 2 cloves garlic, minced
Preparation
In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes. Add the vegetable stock, peas, thyme, oregano, basil, pepper, and salt. Bring to a boil, reduce the heat, and simmer for 10 minutes.
Meanwhile, in a small skillet, melt the vegan butter over medium heat. Add the bread crumbs and garlic and cook, stirring, until lightly toasted, about 3 minutes. Set aside.
When the soup is done simmering, use an immersion blender to blend the soup until smooth. (Alternatively, you can transfer the soup to a blender and blend until smooth.) Taste and adjust the seasonings if necessary.
Serve the soup warm, topped with the garlic croutons. Enjoy!
