Herbed Fresh Pea Soup with Garlic Croutons

This herbed fresh pea soup is a light and delicious vegetarian dish that’s perfect for lunch or dinner. It’s made with a mix of herbs, fresh peas, and vegetable stock, and topped with crunchy garlic croutons. This is a healthy, satisfying meal that’s sure to please even the pickiest eaters.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable stock
  • 2 cups fresh or frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons vegan butter
  • 1/2 cup vegan bread crumbs
  • 2 cloves garlic, minced

Preparation

In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes. Add the vegetable stock, peas, thyme, oregano, basil, pepper, and salt. Bring to a boil, reduce the heat, and simmer for 10 minutes.

Meanwhile, in a small skillet, melt the vegan butter over medium heat. Add the bread crumbs and garlic and cook, stirring, until lightly toasted, about 3 minutes. Set aside.

When the soup is done simmering, use an immersion blender to blend the soup until smooth. (Alternatively, you can transfer the soup to a blender and blend until smooth.) Taste and adjust the seasonings if necessary.

Serve the soup warm, topped with the garlic croutons. Enjoy!
