Ingredients
- 1 package halloumi cheese
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 zucchini, chopped
- 1 red onion, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- Salt and pepper, to taste
- 4 large sheets of aluminum foil
Preparation
Preheat grill to medium-high heat. Cut halloumi cheese into 1/2-inch cubes. In a large bowl, combine the bell peppers, zucchini, red onion, olive oil, garlic, oregano, salt, and pepper. Toss to combine. Divide the veggie mixture into four equal parts. Place one portion of the veggie mixture on each sheet of aluminum foil. Top each with the cubed halloumi cheese. Fold up the sides of the foil and seal the packets tightly. Place the foil packets on the grill and cook for 10-15 minutes, flipping the packets halfway through. When the veggies are tender and the halloumi is golden brown, the packets are done. Serve the packets warm with your favorite sides.
