Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 red bell pepper, diced
- 1 cup carrots, diced
- 1 cup broccoli, chopped
- 1 cup cooked quinoa
- 1 can coconut milk
- 2 tablespoons green curry paste
- 1 tablespoon brown sugar
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon sea salt
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Preparation
Begin by heating the olive oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for 3-4 minutes, until the onion is softened. Next, add the ginger, bell pepper, carrots, and broccoli and sauté for an additional 5 minutes. Add the cooked quinoa and stir to combine.
In a separate bowl, whisk together the coconut milk, green curry paste, brown sugar, turmeric, coriander, cumin, sea salt, and cayenne pepper (if using). Pour the mixture into the skillet and stir to combine. Bring the mixture to a simmer and reduce the heat to low. Simmer for 10-15 minutes, stirring occasionally, until the vegetables are tender and the sauce is thick and creamy.
Remove the skillet from the heat and stir in the fresh cilantro. Serve the green curry Buddha bowl warm with a lime wedge on the side. Enjoy!
