Falafel Fattoush Recipe
Falafel Fattoush is a classic Middle Eastern dish that combines crispy falafel with a tangy fattoush salad. It’s a delicious vegan and vegetarian meal that’s full of flavor and texture. The falafel is made from chickpeas and herbs, then fried until golden and crisp. The fattoush salad is a mix of lettuce, tomatoes, cucumbers, and radishes, tossed with a tangy salad dressing. The two components are served together in a pita pocket or over a bed of greens.
Ingredients:
- 1 can (15.5 ounces) chickpeas, drained and rinsed
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 1/4 cup olive oil, plus more for frying
- 1/2 head romaine lettuce, chopped
- 1/2 English cucumber, chopped
- 2 tomatoes, chopped
- 2 radishes, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon honey
- Salt and pepper, to taste
- 4-6 whole wheat pita pockets, to serve
Preparation:
To prepare the falafel, add the drained chickpeas to a food processor and pulse until coarsely chopped. Add the parsley, cilantro, garlic, cumin, baking powder, salt, and pepper to the processor and pulse until combined. Transfer the mixture to a bowl and stir in the flour. Shape the mixture into 12-16 small patties. Heat the 1/4 cup olive oil in a large skillet over medium heat and fry the falafel until golden brown and crispy, about 3 minutes per side. Remove the falafel from the pan and set aside.
To prepare the fattoush salad, combine the lettuce, cucumber, tomatoes, radishes, mint, and parsley in a large bowl. In a small bowl, whisk together the lemon juice, 1 tablespoon olive oil, honey, salt, and pepper. Pour the dressing over the salad and toss to combine. To assemble the falafel fattoush, divide the salad among four to six pita pockets. Top each with a few falafel patties and serve. Enjoy!
