Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (such as almonds, walnuts, pecans, or peanuts)
  • 1/2 cup dried fruit, chopped (such as raisins, cranberries, or cherries)
  • 1/4 cup honey
  • 1/4 cup nut butter (such as almond or peanut butter)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon

Preparation

Line an 8×8 inch baking pan with parchment paper.

In a large bowl, combine the oats, coconut, nuts, and dried fruit.

In a small saucepan, heat the honey and nut butter over low heat until it’s melted and combined. Remove from the heat and stir in the vanilla extract and cinnamon.

Pour the honey mixture over the oat mixture and stir until everything is well combined.

Pour the granola mixture into the prepared baking pan and spread it out evenly. Use a spatula to press the mixture firmly into the pan.

Place the pan in the refrigerator and allow it to cool and set for at least one hour.

Once the bars are set, remove them from the pan and cut them into bars. Store them in an airtight container in the refrigerator for up to one week.
