Ingredients
- 4 cups vegetable stock
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 2 teaspoons freshly grated ginger
- 2 cloves garlic, minced
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 package ramen noodles (vegan/vegetarian)
- Optional toppings: mushrooms, bok choy, soft-boiled egg, etc.
Preparation
1. In a large pot, combine the vegetable stock, soy sauce, miso paste, ginger, garlic, sesame oil, and rice vinegar. Stir to combine and bring to a boil over medium-high heat.
2. Once boiling, reduce heat to low and simmer for 10 minutes.
3. Meanwhile, cook the ramen noodles in a separate pot according to package instructions. Drain and set aside.
4. Once the broth has simmered for 10 minutes, add the cooked noodles to the pot and simmer for an additional 5 minutes.
5. Serve the soup in individual bowls. Top with desired toppings and enjoy!
