Easy Garlic Mashed Cauliflower Recipe for Vegetarians
Mashed cauliflower is a great alternative to mashed potatoes as it is lower in carbs and calories. This easy garlic mashed cauliflower recipe is the perfect side dish to any vegetarian meal. It’s simple to make, full of flavor, and will have your family and friends asking for seconds!
- 1 large head cauliflower
- 3 cloves garlic, minced
- 1 shallot, minced
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme, chopped
- 1/4 cup vegan cream cheese
- Salt and pepper to taste
1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
2. Cut the cauliflower into florets and spread them onto the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in preheated oven for 20-25 minutes, until golden and tender.
3. Heat a medium skillet over medium heat. Add the minced garlic and shallot and cook until fragrant, about 1 minute. Remove from heat and set aside.
4. Place the roasted cauliflower into a food processor or blender. Add the cooked garlic and shallot, thyme, vegan cream cheese, and salt and pepper to taste. Blend until smooth and creamy, about 1-2 minutes.
5. Serve the mashed cauliflower warm. Enjoy!
