Ingredients
- 1 cup rolled oats
- 1/2 cup nut butter (almond or peanut butter)
- 1/3 cup maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup dried cranberries or other dried fruit (optional)
- 1/4 cup chopped nuts or seeds (optional)
Instructions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, combine the rolled oats, nut butter, maple syrup, coconut oil, vanilla extract, and salt. Stir until everything is well combined.
Fold in the dried cranberries or other dried fruit and chopped nuts or seeds, if desired. The mixture should be slightly crumbly, but should hold together when pressed together.
Form the dough into 1-inch balls and place them on the prepared baking sheet. Press down lightly with a fork to flatten each cookie. Bake for 12-15 minutes, until the edges are golden brown.
Remove from the oven and let cool for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
