Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegan butter, melted and cooled
- 3/4 cup granulated sugar
- 2 large, ripe bananas, mashed
- 2 tablespoons non-dairy milk
- 2 teaspoons vanilla extract
- 1/2 cup dark chocolate chunks
Preparation
Preheat oven to 350°F and lightly grease a 9x5inch loaf pan. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a medium bowl, whisk together the melted vegan butter and sugar. Add the mashed banana, non-dairy milk, and vanilla extract and whisk until combined. Add the wet ingredients to the dry ingredients and stir together until just combined, being careful not to overmix. Fold in the dark chocolate chunks.
Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
