This Curry Cauliflower Burrito is a delicious vegan twist on a classic Mexican staple. Deliciously spiced and full of flavour, it is filled with roasted cauliflower and a fragrant blend of spices for a unique and flavourful burrito. The burrito is served with a creamy vegan sauce and garnished with fresh herbs and pickled onions for a touch of zest.   • 1 head of cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 4 large whole-wheat burrito wraps
  • 1 cup cooked brown rice
  • 1/2 cup cooked black beans
  • 1/2 cup vegan mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1/4 cup pickled red onions
  • 1/4 cup vegan sour cream
  • 1/4 cup chopped fresh parsley


Roast the Cauliflower

Preheat the oven to 425°F. Cut the cauliflower into bite-sized florets and place on a baking sheet. Drizzle with the olive oil and sprinkle with the cumin, coriander, turmeric, smoked paprika, ginger, garlic powder, sea salt, and black pepper. Toss to coat evenly. Roast for 20-25 minutes, until the cauliflower is golden brown and tender.

Assemble the Burritos

Lay out four large burrito wraps on a clean work surface. Divide the cooked brown rice, black beans, and roasted cauliflower evenly among the wraps. Add a few tablespoons of vegan mayonnaise, cilantro, diced red onion, and pickled onion. Fold the burrito wraps into tight parcels. Heat a large skillet over medium heat and lightly grease with olive oil. Place the burritos seam side down and cook for 2-3 minutes, until golden brown. Flip over and cook for another 2-3 minutes.

Prepare the Sauce

In a small bowl, mix together the vegan sour cream, cilantro, parsley, and pickled onions. Serve with the burritos.
