- 4 cups vegetable broth
- 1 (13.5oz) can coconut milk

Preparation of Curried Pumpkin Soup
Begin by heating a large pot over medium heat. Add the olive oil and heat until shimmering. Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and ginger and cook for an additional 1-2 minutes until fragrant. Add the curry powder and cook for 1 minute, stirring to combine.
Add the pumpkin puree and vegetable broth to the pot and stir to combine. Bring to a simmer and cook for 10 minutes. Add the coconut milk to the pot and stir to combine. Cook for an additional 5 minutes.
