  • 1 cup uncooked quinoa
  • 2 cups cauliflower florets
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • Salt and pepper to taste


Start by cooking the quinoa according to the package instructions. While the quinoa is cooking, steam the cauliflower florets until they’re tender. You can do this in the microwave or on the stovetop.

Once the quinoa and cauliflower are cooked, place them in a large bowl and add the curry powder, cumin, raisins, and almonds. Mix everything together until it’s well combined.
