Vegetarian Croquette and Sweetcorn Recipe

Ingredients
- 2 large potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- ½ cup vegan cheese, grated
- 1 cup spinach, chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 cups vegan breadcrumbs
- 1 cup sweetcorn
- Vegetable oil, for frying
Preparation
1. Place the potatoes in a pot of cold water and bring to a boil. Cook for 10-15 minutes or until tender. Drain the potatoes and mash them until smooth.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 3-4 minutes, until softened. Add the spinach and cook for an additional 2 minutes.
3. Add the mashed potatoes to the skillet and mix well. Add the vegan cheese and season with salt and pepper. Cook for 5 minutes, stirring occasionally.
4. Transfer the potato mixture to a bowl and let cool for about 10 minutes. Once cooled, shape the mixture into small patties.
5. Place the flour, bread crumbs, and sweetcorn in three separate shallow dishes. Dip each patty into the flour, then the egg and finally the bread crumbs, making sure to coat each side evenly.
6. Heat the vegetable oil in a large skillet over medium-high heat. Fry the croquettes for 3-4 minutes per side or until golden brown.
7. Serve the croquettes with a side of sweetcorn and enjoy!
