Veggie Croquettes and Bread Recipe

This veggie croquettes and bread recipe is the perfect vegan or vegetarian dish for any occasion. It’s packed with flavor and texture and is sure to be a crowd pleaser. The croquettes are made from a combination of roasted vegetables, fresh herbs, and breadcrumbs, while the bread is a soft and fluffy white loaf. Both are cooked in the oven and served together for a delicious and nutritious meal.


  • 1 cup of diced carrots
  • 1 cup of diced zucchini
  • 1 cup of diced red bell pepper
  • 1/2 cup of finely chopped fresh parsley
  • 1/4 cup of finely chopped fresh oregano
  • 1/4 cup of olive oil
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 cup of panko breadcrumbs
  • 2 tablespoons of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/4 cup of warm water
  • 1 tablespoon of olive oil


Preheat the oven to 400°F and line a baking sheet with parchment paper.

In a large bowl, combine the carrots, zucchini, bell pepper, parsley, oregano, olive oil, salt, and pepper. Toss to combine and spread the vegetables onto the prepared baking sheet. Roast for 25-30 minutes, until the vegetables are tender and lightly browned. Remove from the oven and set aside to cool.

In a medium bowl, mix together the breadcrumbs, flour, baking powder, and warm water. Stir until a thick dough forms. Using your hands, shape the dough into 12 small croquettes and place them on the prepared baking sheet. Brush the croquettes with the remaining olive oil and bake for 15-20 minutes, until golden brown.

While the croquettes are baking, prepare the bread. In a large bowl, combine the all-purpose flour, baking powder, salt, and warm water. Stir until a soft dough forms. Knead the dough for 10 minutes, until it is smooth and elastic. Shape the dough into a loaf and place it on a parchment-lined baking sheet. Brush the top of the loaf with olive oil and bake for 25-30 minutes, until golden brown.

Once both the croquettes and bread are baked, let them cool on a wire rack. Serve warm with your favorite vegan condiments and enjoy.
