Creamy Vegan Sun-Dried Tomato Pesto Pasta
This vegan sun-dried tomato pesto pasta is the perfect weeknight meal. It’s creamy, flavorful, and best of all, easy to make. The sun-dried tomatoes add a delicious depth of flavor to the pesto and the vegan cream cheese gives it a rich and creamy texture. Serve it with a side of your favorite vegetables or add some vegan chicken or tofu for extra protein.
Ingredients
- 1 lb. of your favorite type of pasta (gluten-free if needed)
- 1/2 cup of sun-dried tomatoes
- 1/4 cup of vegan cream cheese
- 3 cloves of garlic, minced
- 1/4 cup of fresh basil leaves, finely chopped
- 1/4 cup of vegan parmesan cheese
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of freshly squeezed lemon juice
- 1 teaspoon of sea salt
- 1/2 teaspoon of freshly ground black pepper
Preparation
Begin by bringing a large pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions. Drain and set aside.
Meanwhile, in a food processor or blender, combine the sun-dried tomatoes, cream cheese, garlic, basil, vegan parmesan cheese, olive oil, lemon juice, salt, and pepper. Blend until smooth and creamy. If the pesto is too thick, add a tablespoon or two of water to thin it out.
In a large skillet over medium heat, add the pesto and cooked pasta. Stir to combine and cook for 2-3 minutes, until the pesto is hot and the pasta is evenly coated. Serve with extra vegan parmesan cheese and freshly ground black pepper.
