Ingredients
- 1 package of extra-firm tofu
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 3 tablespoons of curry powder
- 1 can of coconut milk
- 1/2 teaspoon of sea salt
- 1/4 teaspoon of black pepper
- Fresh herbs for garnish
- Steamed rice or noodles for serving
Preparation
Start by draining and pressing the tofu. Place the tofu on a plate lined with paper towels and top with more paper towels. Place a heavy object on top of the tofu and let it sit for 15 minutes to press out all of the excess liquid. Once the tofu is pressed, cut it into cubes.
Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the diced onion and garlic and cook for about 5 minutes. Add the curry powder and stir to combine. Cook for 1-2 minutes, or until the curry is fragrant.
Add the coconut milk and stir to combine. Bring the mixture to a simmer and add the tofu. Simmer for about 10 minutes, stirring occasionally. Season with sea salt and black pepper.
Serve the curry over steamed rice or noodles. Garnish with fresh herbs. Enjoy!
