Ingredients

  • 1 cup all-purpose flour

  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegan butter, melted (for topping)
  • 2 tablespoons coconut sugar (for topping)

Preparation

Start by preheating a griddle or large skillet over medium heat. Grease it lightly with a vegan butter or oil of your choice.

In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. In a separate bowl, whisk together the almond milk, coconut oil, maple syrup, and vanilla extract until combined.

Add the wet ingredients to the dry ingredients and whisk until just combined and no lumps remain. The batter should be thick but still pourable.

Using a ¼ cup measuring cup, pour the batter onto the preheated griddle or skillet. Cook for 2-3 minutes, until the edges of the pancake are set and the bottom is lightly browned. Flip the pancake and cook for an additional 1-2 minutes, until the bottom is lightly browned. Repeat with the remaining batter.

To make the topping, melt the vegan butter in a small bowl. In a separate bowl, mix together the coconut sugar and cinnamon. Dip the top of each pancake into the melted butter and then into the cinnamon-sugar mixture.
