Chickpea Chocolate Chip Cookies
Chickpea Chocolate Chip Cookies are an indulgent vegan treat that you can feel good about. They’re made with chickpeas, coconut oil, and dark chocolate chips for a satisfyingly sweet and nutritious snack. They’re perfect for an after-school treat, a midnight snack, or a special treat just for you.
Ingredients
- 1 can of chickpeas, drained and rinsed
- 1/2 cup of coconut oil, melted
- 1/2 cup of brown sugar
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 3/4 cup of all-purpose flour
- 1/2 cup of vegan dark chocolate chips
Preparation
Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet or line with parchment paper.
In a food processor, combine chickpeas, coconut oil, brown sugar, and vanilla extract. Blend until smooth, about 1 minute.
In a separate bowl, whisk together baking powder, baking soda, salt, and flour. Add to the food processor and blend until combined.
Fold in chocolate chips and stir until evenly distributed.
Drop dough by the tablespoonful onto the prepared cookie sheet, about 2 inches apart. Bake for 10-12 minutes, or until golden brown. Allow cookies to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.
