Ingredients
- 1 head cauliflower, cut into florets
- 1 large onion, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon paprika
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 cup water
- Freshly chopped cilantro, for garnish
Preparation
Heat the olive oil in a large skillet over medium heat. Add the diced onions and sauté until softened and lightly browned. Add the garlic and cook for another minute, stirring frequently.
Add the cauliflower florets and cook for 3-4 minutes, stirring occasionally. Add the tomato paste, cumin, coriander, turmeric, garam masala, paprika, sugar, and salt. Stir to combine and cook for another minute.
Add the water and bring the mixture to a boil. Lower the heat to a simmer and cover the skillet. Cook for 10-15 minutes, or until the cauliflower is tender.
Remove the lid and let the sauce reduce until the desired consistency is reached. Taste and adjust the seasoning if needed. Garnish with freshly chopped cilantro and serve over rice or with naan. Enjoy!
