Ingredients
For the salad:
- 4 large carrots, peeled and julienned
- 1/4 cup of toasted sesame seeds
- 1/4 cup of chopped cilantro

- 1 tablespoon of white miso paste
- 1 tablespoon of freshly squeezed lemon juice
- 2 tablespoons of olive oil

Preparation
To make the salad, place the julienned carrots in a large bowl. Add the toasted sesame seeds, chopped cilantro, chopped scallions, and dried cranberries to the bowl and mix until everything is evenly distributed.
To make the dressing, in a small bowl, whisk together the miso paste, lemon juice, olive oil, sugar, salt, garlic, and black pepper until everything is well combined and the dressing is smooth. Pour the dressing over the salad and mix until everything is evenly coated.
