Carrot Salad with Miso-Lemon Dressing

Carrot salad with miso-lemon dressing is a light and flavorful dish that’s perfect as a side or as a main course. It’s full of nutrients and is a great way to get your daily dose of carrots. The miso-lemon dressing is an addictive combination of sweet, sour, and salty flavors that balance out the natural sweetness of the carrots. For the salad:

  • 4 large carrots, peeled and julienned
  • 1/4 cup of toasted sesame seeds
  • 1/4 cup of chopped cilantro
  • 1/4 cup of chopped scallions
  • 1/4 cup of dried cranberries

For the dressing:

  • 1 tablespoon of white miso paste
  • 1 tablespoon of freshly squeezed lemon juice
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of sugar
  • 1/4 teaspoon of salt
  • 1 clove of garlic, minced
  • 1/4 teaspoon of freshly ground black pepper


To make the salad, place the julienned carrots in a large bowl. Add the toasted sesame seeds, chopped cilantro, chopped scallions, and dried cranberries to the bowl and mix until everything is evenly distributed.

To make the dressing, in a small bowl, whisk together the miso paste, lemon juice, olive oil, sugar, salt, garlic, and black pepper until everything is well combined and the dressing is smooth. Pour the dressing over the salad and mix until everything is evenly coated.

Serve the salad immediately, or chill it in the refrigerator for up to an hour before serving. Enjoy!
