This Caramel Fig Vanilla Layer Cake is a delicious vegan-friendly dessert that is sure to satisfy both vegans and non-vegans alike. It has a creamy vanilla cake base, filled with a layer of creamy caramel, topped with slices of fresh figs and a light sprinkling of sugar. Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup vegan butter, softened
  • 1 1/2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1/2 cup vegan sour cream
  • 1/2 cup almond milk
  • 1/2 cup vegan caramel sauce
  • 2 cups fresh figs, sliced
  • 2 tablespoons granulated sugar

Preparation

Preheat your oven to 350°F and lightly grease two 8-inch round cake pans with vegan butter.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, use an electric mixer to beat together the vegan butter, sugar, and vanilla extract until light and fluffy, about 2 minutes. Add in the sour cream and almond milk and mix until combined.

Slowly add the flour mixture to the wet ingredients, mixing until just combined. Divide the batter evenly between the prepared cake pans and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Once the cakes have cooled, spread the caramel sauce onto one of the cakes. Place the other cake on top of it and then top with the sliced figs. Sprinkle the sugar over the top and serve. Enjoy!
