Broccoli Pasta: A Delicious Vegan and Vegetarian Recipe
Broccoli Pasta is a quick and easy dish to make, full of flavor and nutrition. It’s a great vegetarian and vegan option for lunch or dinner, and can easily be customized to suit individual tastes. Broccoli is a nutrient-dense vegetable, packed with vitamins C, K, and A, manganese, and fiber. - 1 pound of Penne pasta
- 2 heads of broccoli, cut into florets
- 4 cloves of garlic, minced
- 1/4 cup of olive oil
- Salt and pepper to taste
- 1/4 cup of vegan Parmesan, for garnish (optional)
Begin by bringing a large pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions.
Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic, stirring constantly, and cook until lightly browned, about 2 minutes. Add the broccoli florets and season with a pinch of salt and pepper. Cook, stirring occasionally, until the broccoli is tender, about 5 minutes.
Once the pasta is cooked, drain it and add it to the skillet with the broccoli. Stir everything together until combined. Taste and adjust seasoning if necessary.
