This Broccoli Melt with Fried Egg is a delicious vegetarian meal that is simple to prepare and is sure to be a hit with the entire family. It’s made with fresh broccoli, melted cheese, and a fried egg, giving it a unique combination of flavors and textures that will have everyone asking for more. This meal is also vegan-friendly, as the egg can easily be substituted with a vegan egg substitute.

This dish is great for lunch or dinner, or even as a snack. It’s packed with nutrition, including protein from the egg, and plenty of vitamins and minerals from the broccoli. Plus, it’s a great way to use up any leftover broccoli you may have in your fridge.

  • 1 head of fresh broccoli
  • 1/2 cup of shredded cheese (can be any type)
  • 1 egg
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Begin by preheating the oven to 375 degrees Fahrenheit. While the oven is heating up, cut the broccoli into bite-sized pieces and place them on a baking sheet. Drizzle the olive oil over the broccoli pieces and season with salt and pepper. Place the baking sheet in the oven and bake for 20 minutes, or until the broccoli is tender and beginning to brown.

Once the broccoli is done baking, remove it from the oven and spread the shredded cheese over the top. Place the baking sheet back in the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.

While the broccoli and cheese are baking, heat a non-stick skillet over medium-high heat. Crack the egg into the skillet and cook for 2-3 minutes, or until the egg is cooked to your desired doneness.

Once the broccoli, cheese, and egg are all cooked, assemble the Broccoli Melt. Place the broccoli and cheese on a plate and top with the fried egg. Enjoy!
