These Blueberry Applesauce Cake Bars are a delicious treat that will satisfy any sweet tooth. They are perfect for an after-dinner dessert, or a midday snack.   • 2 cups all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup applesauce
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract
  • ¼ cup coconut oil, melted
  • For the streusel topping:
    • ¼ cup flour
    • ¼ cup brown sugar
    • ¼ cup oats
    • 2 tablespoons melted coconut oil


Preheat the oven to 350°F. Grease an 8×8 inch baking pan with coconut oil or vegan butter.

In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add in the applesauce, blueberries, vanilla extract, and melted coconut oil. Stir until everything is combined. The batter will be thick.

Spread the batter into the prepared pan. In a small bowl, mix together the ingredients for the streusel topping. Sprinkle the streusel topping over the batter.

Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Allow the bars to cool before slicing into squares. Enjoy!
