Recipe Steps
Soak the textured soy protein for 20 minutes.
Finely chop the garlic and onion. Also chop the bell pepper, though I prefer it slightly larger than the onion.
Heat a pot with a couple of tablespoons of oil and sauté the vegetables with a pinch of salt.
Drain the textured soy protein as much as you can. Once the vegetables are golden, add the soy and sauté for a couple of minutes.
Add the fried tomato sauce and parsley, and cook for 7 minutes. Taste for salt and adjust if necessary.
Cook the spaghetti according to the package instructions.
Add the spaghetti to the tomato mixture and let it cook for another 2 minutes to combine the flavors.
