Vegan Spaghetti Bolognese


Ingredients

  • 40 minutes
  • Serves 5
  • 150 g textured soy protein
  • 1 onion
  • 2 garlic cloves
  • 1 red bell pepper
  • 200 g fried tomato sauce
  • 500 g spaghetti
  • Oil
  • Salt
  • Chopped parsley

Recipe Steps

  1. Soak the textured soy protein for 20 minutes.

  2. Finely chop the garlic and onion. Also chop the bell pepper, though I prefer it slightly larger than the onion.

  3. Heat a pot with a couple of tablespoons of oil and sauté the vegetables with a pinch of salt.

  4. Drain the textured soy protein as much as you can. Once the vegetables are golden, add the soy and sauté for a couple of minutes.

  5. Add the fried tomato sauce and parsley, and cook for 7 minutes. Taste for salt and adjust if necessary.

  6. Cook the spaghetti according to the package instructions.

  7. Add the spaghetti to the tomato mixture and let it cook for another 2 minutes to combine the flavors.
