Vegetarian “Chorizo” Tacos

Vegetarian “Chorizo” Tacos are a delicious and healthy alternative to traditional tacos. They are packed with flavour, thanks to the combination of spices that make up the vegan chorizo, and they are a great way to add a protein-rich meal to your diet without relying on animal products. The use of soft tortillas makes them easy to eat, and the combination of vegetables, spices, and vegan cheese makes them a truly indulgent and satisfying meal.


  • 1 package vegan chorizo
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeno, minced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegan cheese, shredded
  • 8 soft tortillas
  • 1/2 cup cilantro, chopped
  • 1/2 cup salsa, for serving


Heat a large skillet over medium-high heat and add the vegan chorizo. Cook for 5 minutes, stirring occasionally, until the chorizo starts to brown.

Add the onion, bell pepper, jalapeno, garlic, and spices to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are soft and the chorizo is cooked through.

Add the vegan cheese and stir until it is melted and fully incorporated. Remove the skillet from the heat and set aside.

Heat a large skillet over medium-high heat. Place a tortilla in the skillet and cook for 1 minute. Flip the tortilla and cook for an additional minute. Transfer the cooked tortilla to a plate and repeat with the remaining tortillas.

Divide the chorizo mixture among the tortillas. Top with cilantro and salsa and serve. Enjoy!
