Ingredients

  • 1 can of jackfruit in brine, drained and shredded
  • 3 tablespoons of vegan BBQ sauce
  • 8-10 small soft taco shells
  • 1/2 red onion, finely diced
  • 1 mango, diced
  • 1 jalapeño, diced
  • 2 tablespoons of lime juice
  • 2 tablespoons of chopped cilantro
  • Salt and pepper to taste

Preparation

Begin by preparing the jackfruit. Drain the jackfruit and shred it with a fork. Heat a skillet on medium heat and add the jackfruit. Cook for 5 minutes, stirring occasionally. Add the BBQ sauce and mix everything together. Cook for another 5 minutes, stirring occasionally. Set aside.
