BBQ Hawaiian Tofu Bowl

Ingredients

  • 1/2 block extra-firm tofu
  • 1/4 cup BBQ sauce
  • 1/2 cup cooked white rice
  • 1/2 cup chopped pineapple
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons sesame seeds
  • Salt and pepper to taste

Preparation

Begin by draining and pressing the tofu. Place the tofu on a cutting board and slice it into cubes. Place the tofu in a bowl and pour the BBQ sauce over it. Toss the tofu cubes to coat evenly. Set aside and let the tofu marinate for at least 30 minutes.

Once the tofu is marinated, preheat a grill or skillet over medium-high heat. Add the tofu cubes to the pan and cook for 6-8 minutes, stirring occasionally. Once the tofu is golden brown and cooked through, remove it from the pan and set aside.

In a separate bowl, combine the pineapple, red onion, cilantro, and sesame seeds. Mix together until combined. Add a pinch of salt and pepper to taste.

To assemble the bowls, place a quarter cup of cooked white rice in each bowl. Top with the cooked tofu cubes and then the pineapple salsa. Garnish with additional cilantro and sesame seeds. Serve and enjoy!
