Baked Vegan Quinoa Hash Browns

These delicious vegan quinoa hash browns are a great way to start your day! Crispy on the outside, tender on the inside, and full of flavor, they’re sure to become a family favorite. Perfect for breakfast, lunch, or dinner, they’re also great as a side dish. They’re easy to make, and can be made ahead of time and stored in the refrigerator for up to three days. Plus, they’re vegan and gluten-free!


  • 1 cup quinoa, cooked
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup vegan Parmesan cheese


Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.

In a large bowl, combine the cooked quinoa, diced onion, diced bell pepper, minced garlic, oregano, basil, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Mix until all of the ingredients are evenly distributed.

Add the olive oil and vegan Parmesan cheese and mix until everything is evenly coated. Form the mixture into 8 patties and place them on the prepared baking sheet. Bake for 15 minutes. Flip the patties and bake for an additional 15 minutes.

Remove the hash browns from the oven, let cool for 5 minutes, and serve warm. Enjoy!
