This delicious and easy to make Mushroom Kale Pasta is the perfect vegetarian meal for any night of the week. It’s packed with flavor and takes just 30 minutes to make. The combination of mushrooms and kale gives the pasta a hearty and satisfying flavor. It’s the perfect meal to satisfy both vegetarians and meat-eaters alike. Plus, it’s a great way to add healthy vegetables to your diet.
- 8 ounces of linguine pasta
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1/2 teaspoon of red pepper flakes
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 cups of mushrooms, sliced
- 3 cups of kale, chopped
- 1/4 cup of white wine
- 1/4 cup of vegetable broth
- 2 tablespoons of nutritional yeast
- 2 tablespoons of freshly grated Parmesan cheese (optional)
To begin, bring a large pot of salted water to a boil over high heat. Once the water is boiling, add the linguine and cook according to package instructions. Once the pasta is cooked, drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the garlic, red pepper flakes, salt, and pepper and cook for 1 minute, stirring constantly. Add the mushrooms and cook for 3-4 minutes, stirring occasionally. Add the kale and continue to cook for 2 minutes, stirring occasionally.
Add the white wine and vegetable broth and bring to a simmer. Simmer for 5 minutes, stirring occasionally. Add the cooked linguine, nutritional yeast, and Parmesan cheese (if using). Stir until all ingredients are combined and the cheese is melted. Serve immediately.
