Asparagus Frittata with Herbs and Mozzarella
This delicious and healthy Asparagus Frittata with Herbs and Mozzarella is the perfect vegetarian dinner. It’s easy to make and packed with flavor. Ingredients
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 pound asparagus, cut into 1 inch pieces
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh herbs (basil, oregano, thyme, etc)
- 6 large eggs, lightly beaten
- 1/2 cup grated mozzarella cheese
Preparation
Heat the olive oil in a large oven-proof skillet over medium heat. Add the onion and garlic and cook for 2 minutes, stirring occasionally. Add the asparagus, pepper and herbs and cook for an additional 3 minutes, stirring occasionally.
In a medium bowl, whisk together the eggs and mozzarella cheese. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are almost set. Place the skillet in the oven and bake for 10 minutes, or until the eggs are set. Serve warm.
