Ingredients

For the tamales you will need:

  • 2 cups masa harina
  • 1/2 cup vegetable shortening
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup water
  • 2 cups apple butter

For the filling you will need:

  • 3 Granny Smith apples, peeled, cored, and diced
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

For the topping you will need:

  • 2 tablespoons vegan butter, melted
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon

Preparation

Begin by making the masa dough. In a large bowl, combine the masa harina, baking powder, and salt. Cut in the vegetable shortening until the mixture resembles coarse crumbs. Add the water and mix until a soft dough forms. Cover the bowl with a damp cloth and let the dough rest for 30 minutes.

Next, prepare the filling. In a medium bowl, combine the diced apples, brown sugar, cinnamon, and nutmeg. Mix until the apples are evenly coated. Set aside.

To assemble the tamales, divide the dough into 16 equal pieces. Roll each piece into a 4-inch circle. Spread 2 tablespoons of apple butter onto each circle, leaving a 1/2-inch border. Top with 2 tablespoons of the apple filling. Fold the dough over the filling and seal the edges with a fork.

Bring a large pot of water to a boil. Carefully place the tamales into the boiling water and cover the pot. Steam the tamales for 20 minutes, or until the dough is cooked through.

Once the tamales are cooked, remove them from the pot and place them on a baking sheet. Brush each tamale with melted vegan butter and sprinkle with the brown sugar and cinnamon mixture. Serve warm.
