Almond Butter Tofu Stir-Fry
This Almond Butter Tofu Stir-Fry is a delicious vegan-friendly dish that is full of flavor and nutrition. It consists of crispy fried tofu cubes, stir-fried vegetables, and a creamy and nutty almond butter sauce. The dish is easy to make and is perfect for a weeknight dinner or a weekend meal. Ingredients
- 1 block extra-firm tofu, diced
- 2 tablespoons sesame oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 carrots, sliced
- 1/2 cup sliced mushrooms
- 1/4 cup sliced almonds
- 1/4 cup almond butter
- 1/4 cup vegetable broth
- 2 tablespoons soy sauce or tamari
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
Preparation
Begin by preparing the tofu. Drain the tofu and press it between two plates or a cutting board and a plate, weighted down with a heavy object. Let it sit for 15 minutes to press out the excess moisture. When ready, dice the tofu into cubes.
Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the diced tofu and cook for 5 minutes, stirring occasionally, until the cubes are golden and crispy. Remove from the skillet and set aside.
Lower the heat to medium and add the remaining 1 tablespoon of sesame oil. Add the bell peppers, carrots, and mushrooms to the skillet and cook for 5 minutes, stirring occasionally, until the vegetables are tender. Then add the almonds and cook for an additional 2 minutes, stirring occasionally.
In a small bowl, whisk together the almond butter, vegetable broth, soy sauce or tamari, garlic powder, ground ginger, and black pepper. Pour the sauce over the vegetables and tofu in the skillet and cook for an additional 2-3 minutes, stirring occasionally, until everything is coated in the sauce.
Serve with cooked white or brown rice and enjoy!
